These chocolate zucchini muffins are packed with nourishing ingredients while still feeling like a treat. Perfect for busy mornings, lunchboxes, or a cozy snack.

Ingredients:

  • 3/4 cup oat flour

  • 1/2 cup Just Ingredients protein powder (vegan or whey)

  • 1/4 cup unsweetened cocoa powder or Superfood Hot Chocolate powder (Just Ingredients)

  • 1 cup grated zucchini (squeezed dry and packed)

  • 1 cup coconut milk or raw milk

  • 2 eggs or 2 flax eggs

  • 1/4 cup maple syrup

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon Himalayan pink salt

  • 1/4 cup melted coconut oil

  • 2 teaspoons vanilla extract

  • 1/2 cup chocolate chips

  • 1/2 cup blueberries

Instructions:

  1. Preheat your oven to 350°F (175°C) and line or grease a muffin tin.

  2. In a large bowl, whisk together eggs (or flax eggs), maple syrup, coconut milk, melted coconut oil, and vanilla.

  3. In another bowl, combine oat flour, protein powder, cocoa powder, baking powder, baking soda, and salt.

  4. Add dry ingredients to wet ingredients and mix until combined.

  5. Fold in grated zucchini, chocolate chips, and blueberries.

  6. Fill muffin cups 3/4 full and bake for 18-22 minutes, or until a toothpick comes out clean.

  7. Let cool and enjoy as a nourishing snack or breakfast option.
